Fruit Processing for Dehydration

Behind every bag of Blackwood Larder fruit is a careful process that keeps the flavour and goodness locked in. From the moment fruit is collected from our local growers to the moment it’s sealed in a pouch, every step is handled with care. Here’s a look at how we prepare and dehydrate our fruit to make sure it tastes great, lasts longer, and helps reduce waste – one batch at a time.

  1. Collect fruit from supplier. Store at appropriate temperature on the trip home.
  2. Store in the refrigerator
  3. When ready for processing wash fruit
  4. Allow fruit to dry
  5. Using the green cutting board, cut the fruit into suitable sized pieces ready for drying
  6. Place the fruit slices onto a clean dehydrator tray. ( use a silicon sheet as needed)
  7. Place into the dehydrator at appropriate temperature for appropriate length of time. ( See table)
  8. Check towards the end of the cycle and check if the fruit is dry enough
  9. If it is not then place it back in for additional treatment.
  10. When finished allow the product to cool and then place into clean dry containers. May be into Retail bags immediately or larger storage containers labelled with the date of dehydration.
  11. If into retail bags make sure to weigh the product to make the appropriate amount is in each bag.
